Chef Melo started his career in the Hospitality Industry in Brazil working in luxury hotels. Moving to Canada was Chef Melo’s next big step, it allowed for him to challenge himself both professionally and personally.
After working in kitchens as a dishwasher for years, Chef Melo enrolled in Vancouver Community College’s Baking Program and set off to France to study patisserie at Le Cordon Bleu Paris.
When collaborating with others, his meticulous attention to detail was integral, especially during the opening of a new boutique hotels, restaurants and bakeries around the world.
After working for over a decade with some of the finest pastry chefs in different countries, Chef Melo decided to pursue his dream of opening his own patisserie. This dream came to life in 2020, when he opened Melo Patisserie in the heart of Mount Pleasant.
